Why the third seat costs what it costs
Weight. Every pound aboard is a pound of performance, and on a warm day at a field that behaves like 4,100 ft, three adults plus fuel is a different airplane from two. The price difference reflects the fuel load and the scheduling, not the number of headsets.
We confirm the combined figure against the actual people on the booking rather than publishing one number and hoping. The per-person published limit is 200 lb.
What the two people not flying get out of it
The radio, the view forward over a glass panel, and a much better sense of what the person in the left seat is being asked to do. If they are funding a program, that hour is the most useful sixty minutes they will spend on the decision.
A limit worth knowing before you book
One logbook entry comes out of this flight, and it belongs to the person in the left seat. Three people cannot each log an hour of dual from one flight, and any school telling you otherwise is describing something the regulations do not allow.
Three aboard is a weight-and-balance problem before it is anything else.
